The name KoKob, of Eritrean origin, means “star.” This unique cookie is made with white teff flour, traditionally used for injera, the Ethiopian flatbread. Teff, one of the oldest grains in the world, is naturally gluten-free, whole, and highly nutritious, with a delightfully nutty flavor. The coffee and dark chocolate chips balance bitterness and acidity, creating a cookie that is both indulgent and refined.
